Ingredients

  • Ibérico pluma – 800 g / 28 oz
  • Olive oil – 2 tablespoons
  • Sea salt – 1 teaspoon
  • Freshly ground black pepper – 1 teaspoon
  • Garlic cloves, minced – 2 cloves
  • Fresh thyme leaves – 1 tablespoon
  • Lemon – 1, juiced

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together the olive oil, minced garlic, sea salt, ground black pepper, and thyme leaves to form a marinade.
  3. Rub the Ibérico pluma evenly with the marinade, ensuring all sides are coated.
  4. Allow the meat to rest at room temperature for about 15 minutes to absorb the flavors.
  5. Place the marinated pluma on the grill and cook for 4-5 minutes on each side, or until it reaches a medium-rare doneness.
  6. Remove from the grill and let it rest for 5 minutes under a foil tent to retain juices.
  7. Slice thinly against the grain, drizzle with fresh lemon juice and serve immediately.
