Ingredients

  • peanuts – 2 cups / 260 g
  • cassava leaves – 500 g
  • fresh shrimp – 500 g, peeled and deveined
  • onions – 2 large, chopped
  • tomatoes – 3 large, chopped
  • coconut milk – 2 cups / 480 ml
  • garlic cloves – 3, minced
  • olive oil – 2 tablespoons
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Dry roast the peanuts in a pan over medium heat until lightly browned. Allow them to cool and grind into a paste.
  2. In a large pot, heat the olive oil over medium heat. Add the onions and sauté until translucent.
  3. Add the garlic and cook for an additional minute until fragrant.
  4. Stir in the tomatoes and cook until the tomatoes are softened, about 5 minutes.
  5. Add the ground peanut paste and coconut milk, stirring to combine.
  6. Introduce the cassava leaves and fresh shrimp to the pot and stir well.
  7. Bring the mixture to a gentle simmer and cook for 20-25 minutes until the shrimp are cooked and the flavors meld together.
  8. Season with salt and black pepper to taste.
  9. Serve hot with rice or bread.
