Ingredients

  • cooked white rice – 4 cups / 800 g

  • eggs – 4 large
  • garlic, minced – 4 cloves
  • shallots, finely sliced – 2 medium
  • soy sauce – 3 tbsp
  • oyster sauce – 2 tbsp
  • chili paste – 1 tbsp
  • salt – 1 tsp
  • pepper – 1/2 tsp
  • spring onions, chopped – 2 stalks
  • vegetable oil – 3 tbsp

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium heat. Add garlic and shallots, sauté until fragrant.
  2. Increase the heat to high, add chicken, shrimp, and squid. Stir-fry until the chicken is cooked through and shrimp turns pink.
  3. Push the mixture to one side of the pan. Add another tablespoon of oil, then add the rice. Stir well, combining with the meat and seafood.
  4. Mix in soy sauce, oyster sauce, chili paste, salt, and pepper. Stir until rice is evenly coated with the sauce.
  5. In a separate pan, fry the eggs sunny-side up using the remaining oil. Serve each portion of rice topped with a fried egg.
  6. Garnish with spring onions and serve hot.
