Ingredients

  • all-purpose flour – 2 cups / 250 g
  • instant yeast – 1 tsp
  • granulated sugar – 2 tbsp / 25 g
  • salt – 1/2 tsp
  • warm water – 3/4 cup / 180 ml
  • egg – 1, beaten
  • vegetable oil – 2 tbsp
  • canned tuna – 1 cup / 200 g
  • red chilies – 3, finely chopped
  • shallots – 2, finely chopped
  • garlic – 2 cloves, minced
  • curry powder – 1 tsp
  • coconut milk – 1/4 cup / 60 ml
  • lime juice – 1 tbsp
  • vegetable oil for frying – as needed

Instructions

  1. In a bowl, mix flour, yeast, sugar, and salt. Add warm water, beaten egg, and oil. Knead until smooth. Cover and let rise for 1 hour.
  2. In a pan, heat oil. Sauté shallots, garlic, and chilies until fragrant. Add tuna, curry powder, and coconut milk. Cook for 5 minutes. Stir in lime juice, then remove from heat.
  3. Divide dough into 12 portions. Roll each into a circle. Place filling on one-half, fold over, and crimp edges to seal.
  4. Heat oil for frying. Fry pastries until golden brown. Drain on paper towels and serve warm.
