Originating from the mountainous regions of Vietnam, Pa Pỉnh Tộp is a culinary treasure deeply rooted in the cultural tapestry of Vietnamese ethnic minorities. This dish traditionally features freshwater fish, marinated in a medley of herbs and spices, then wrapped in banana leaves and grilled to perfection. The magic of Pa Pỉnh Tộp lies in its harmonious blend of flavors – the umami of fish infused with aromatic herbs, the subtle heat of chili, and a hint of smokiness from the grill. Perfect for a communal feast, this dish offers a unique gastronomic journey into Vietnamese mountain cuisine.
Ingredients
- freshwater fish (such as tilapia) – 1 whole fish, approximately 1.5 – 2 lbs (700 – 900 g)
- banana leaves – 2 large leaves, rinsed and dried
- lemongrass, finely chopped – 2 stalks
- fresh turmeric, grated – 1 tablespoon / 15 g
- ginger, grated – 1 tablespoon / 15 g
- garlic, minced – 3 cloves
- red chili, finely chopped – 1 small chili
- fish sauce – 2 tablespoons / 30 ml
- lime, juiced – 1 lime
- salt – 1 teaspoon / 5 g
- pepper – 1/2 teaspoon / 2.5 g
- fresh dill, chopped – 2 tablespoons / 8 g
Instructions
- Clean the fish thoroughly, removing scales and internal organs. Pat the fish dry.
- In a bowl, combine lemongrass, turmeric, ginger, garlic, chili, fish sauce, lime juice, salt, and pepper to create the marinade.
- Rub the marinade generously over the fish, making sure to get inside the cuts and cavities. Let it sit for at least 30 minutes.
- Lay the banana leaves flat and place the marinated fish in the center. Sprinkle fresh dill evenly over the fish.
- Fold the leaves tightly around the fish to seal it, then secure with kitchen twine or toothpicks.
- Preheat the grill to medium-high heat. Place the wrapped fish on the grill and cook for approximately 20 minutes each side, or until the fish is thoroughly cooked and tender.
- Carefully unwrap the fish, transfer to a platter, and serve hot with steamed rice or sticky rice.
Substitutions
- freshwater fish (such as tilapia) -> trout or another mild-flavored fish
