Ingredients

  • Dried red chilies – 5 pieces
  • Turmeric powder – 2 teaspoons / 4 g
  • Coriander seeds – 1 tablespoon / 15 g
  • Cumin seeds – 1 teaspoon / 2 g
  • Lemongrass stalks – 2 stalks, chopped
  • Galangal – 1 tablespoon / 15 g, chopped
  • Garlic cloves – 5 cloves
  • Shallots – 3 finely chopped
  • Shrimp paste – 1 teaspoon / 5 g
  • Sea salt – 1 teaspoon / 5 g

Instructions

  1. Soak the dried red chilies in warm water for 10 minutes, then drain.
  2. In a dry pan over medium heat, toast the coriander seeds and cumin seeds until aromatic. Allow to cool, then grind to a fine powder.
  3. Combine the chilies, turmeric, ground coriander, ground cumin, lemongrass, galangal, garlic, shallots, shrimp paste, and sea salt in a mortar and pestle.
  4. Pound all ingredients together until you form a fragrant, smooth paste. Alternatively, use a food processor for convenience.
