Ingredients

  • jasmine rice – 2 cups / 400 g
  • pineapple chunks – 1 cup / 165 g
  • prawns – 200 g
  • chicken breast – 150 g, cooked and diced
  • cashew nuts – 1/2 cup / 75 g
  • green peas – 1/2 cup / 75 g
  • curry powder – 1 tsp
  • soy sauce – 2 tbsp
  • fish sauce – 1 tbsp
  • sugar – 1 tsp
  • white pepper – 1/2 tsp
  • garlic – 2 cloves, minced
  • onion – 1 small, diced
  • spring onions – 2 stalks, chopped
  • vegetable oil – 2 tbsp

Instructions

  1. Cook jasmine rice ahead of time and let it cool completely.
  2. In a large pan or wok, heat vegetable oil over medium heat. Sauté garlic and onion until fragrant.
  3. Add prawns and cook until pink. Add chicken pieces and stir-fry for another 2 minutes.
  4. Stir in curry powder, blending well with the meat.
  5. Add cooled rice, pineapple chunks, cashew nuts, and green peas to the pan. Stir-fry all ingredients thoroughly.
  6. Mix soy sauce, fish sauce, sugar, and white pepper in a small bowl. Pour over the rice and continue to stir-fry until everything is evenly coated.
  7. Adjust seasoning if necessary and toss in spring onions just before removing from heat.
  8. Serve hot in a carved-out pineapple or on a platter.
