Ingredients

- chicken breast – 150 g, cooked and diced
- cashew nuts – 1/2 cup / 75 g
- green peas – 1/2 cup / 75 g
- curry powder – 1 tsp
- soy sauce – 2 tbsp
- fish sauce – 1 tbsp
- sugar – 1 tsp
- white pepper – 1/2 tsp
- garlic – 2 cloves, minced
- onion – 1 small, diced
- spring onions – 2 stalks, chopped
- vegetable oil – 2 tbsp
Instructions
- Cook jasmine rice ahead of time and let it cool completely.
- In a large pan or wok, heat vegetable oil over medium heat. Sauté garlic and onion until fragrant.
- Add prawns and cook until pink. Add chicken pieces and stir-fry for another 2 minutes.
- Stir in curry powder, blending well with the meat.
- Add cooled rice, pineapple chunks, cashew nuts, and green peas to the pan. Stir-fry all ingredients thoroughly.
- Mix soy sauce, fish sauce, sugar, and white pepper in a small bowl. Pour over the rice and continue to stir-fry until everything is evenly coated.
- Adjust seasoning if necessary and toss in spring onions just before removing from heat.
- Serve hot in a carved-out pineapple or on a platter.
