Ginisang Munggo, a beloved dish from the Philippines, is a flavorful stew made from mung beans, often enjoyed during days of abstinence such as Lent or as a cozy rainy day comfort food. Traditionally served as a main course or side dish, it’s often paired with steamed rice or fried fish, making it a staple in many Filipino households.

Ingredients

  • mung beans – 1 cup / 200 g
  • water – 6 cups / 1.4 L
  • pork belly – 200 g / 7 oz, cubed
  • garlic – 4 cloves, minced
  • onion – 1 medium, chopped
  • tomatoes – 2 medium, diced
  • fish sauce – 2 tablespoons
  • spinach leaves – 2 cups / 60 g
  • salt – to taste
  • pepper – to taste
  • oil – 2 tablespoons

Instructions

  1. Rinse mung beans under cold water. In a pot, combine them with 6 cups of water. Bring to a boil, then lower the heat to simmer for about 45 minutes, or until the beans are tender.
  2. In a separate pan, heat oil over medium heat. Add pork belly and cook until browned. Remove and set aside.
  3. In the same pan, add garlic and onion. Sauté until onion is translucent.
  4. Add tomatoes and continue to cook for another 3 minutes until veggies are softened.
  5. Stir in the fish sauce and return pork to the pan. Mix well.
  6. Combine pork mixture with cooked mung beans. Let it simmer for 10 minutes.
  7. Add spinach leaves and simmer for an additional 5 minutes. Season with salt and pepper.
  8. Serve hot with rice.
