Ingredients

  • chicken, cut into serving pieces – 1.5 kg
  • soy sauce – 1/2 cup / 120 ml
  • white vinegar – 1/3 cup / 80 ml
  • garlic, minced – 8 cloves
  • bay leaves – 3
  • whole peppercorns – 1 teaspoon
  • water – 1 cup / 240 ml
  • oil – 2 tablespoons
  • sugar – 1 teaspoon
  • salt – to taste
  • green onions, chopped – for garnish

Instructions

  1. In a large bowl, combine the chicken pieces with soy sauce, vinegar, minced garlic, bay leaves, and peppercorns. Marinate for at least 30 minutes, but preferably 2 hours in the refrigerator.
  2. Heat oil in a large pot over medium heat. Add the marinated chicken pieces, reserving the marinade, and brown on all sides.
  3. Pour the marinade, including garlic and spices, into the pot with the chicken. Add water and bring to a boil.
  4. Lower the heat and simmer uncovered for about 30 minutes, or until the chicken is tender and cooked through. Stir occasionally.
  5. Add sugar and season with salt to taste. Adjust sourness by adding more vinegar if preferred.
  6. Serve hot, garnished with chopped green onions.
