Adobong Manok, or Chicken Adobo, is a quintessential Filipino dish known for its balance of savory, tangy, and aromatic flavors. Ingredients
- chicken, cut into serving pieces – 1.5 kg
- soy sauce – 1/2 cup / 120 ml
- white vinegar – 1/3 cup / 80 ml
- garlic, minced – 8 cloves
- bay leaves – 3
- whole peppercorns – 1 teaspoon
- water – 1 cup / 240 ml
- oil – 2 tablespoons
- sugar – 1 teaspoon
- salt – to taste
- green onions, chopped – for garnish
Instructions
- In a large bowl, combine the chicken pieces with soy sauce, vinegar, minced garlic, bay leaves, and peppercorns. Marinate for at least 30 minutes, but preferably 2 hours in the refrigerator.
- Heat oil in a large pot over medium heat. Add the marinated chicken pieces, reserving the marinade, and brown on all sides.
- Pour the marinade, including garlic and spices, into the pot with the chicken. Add water and bring to a boil.
- Lower the heat and simmer uncovered for about 30 minutes, or until the chicken is tender and cooked through. Stir occasionally.
- Add sugar and season with salt to taste. Adjust sourness by adding more vinegar if preferred.
- Serve hot, garnished with chopped green onions.
