Adobong Dilaw is a vibrant variation of the traditional Filipino adobo dish, known for its distinct yellow hue derived from turmeric. Unlike the classic adobo which uses soy sauce, Adobong Dilaw is seasoned mainly with turmeric and vinegar, offering a unique and aromatic twist. Its origins can be traced back to the province of Cavite in the Philippines, where the use of spices reflects the region’s rich cultural heritage and diversity. This dish celebrates the infusion of native Filipino flavors with a touch of colonial influence, creating a flavorful stew that’s both comforting and exotic.
