Ingredients

  • Chicken thighs – 1 kg / 2.2 lbs
  • Water – 6 cups / 1.4 liters
  • Tamarind paste – 3 tbsp / 45 g
  • Tomatoes – 2 large, quartered
  • Onion – 1 large, sliced
  • Radish – 1 cup / 100 g, sliced
  • Okra – 1 cup / 100 g, trimmed
  • Eggplant – 1 medium, sliced
  • Spinach – 2 cups / 60 g
  • Fish sauce – 2 tbsp / 30 ml
  • Salt – to taste
  • Ground black pepper – to taste

Instructions

  1. In a large pot, bring water to a boil and add chicken pieces. Lower the heat to simmer and cook until the chicken is tender, about 30 minutes.
  2. Scoop out any impurities that float to the surface.
  3. Add tamarind paste, tomatoes, and onions to the pot. Stir well to dissolve the tamarind and simmer for another 10 minutes.
  4. Introduce radish, okra, and eggplant to the broth, cooking until they soften, approximately 5-7 minutes.
  5. Season with fish sauce, salt, and pepper, adjusting to taste.
  6. Finally, add spinach and let cook for a further 2 minutes or until wilted.
  7. Serve hot, accompanied by steamed rice.
