Ingredients

  • Bangus (milkfish) – 1 whole / approx. 800 g, cleaned and cut into steaks
  • Water – 5 cups / 1.2 liters
  • Tamarind Paste – 3 tablespoons / 45 g
  • Tomatoes – 2 large / 300 g, quartered
  • Onion – 1 large / 150 g, sliced
  • Radish – 1 medium / 100 g, sliced
  • Eggplant – 1 medium / 150 g, sliced
  • String beans – 1 cup / 100 g, cut into 2-inch pieces
  • Spinach – 2 cups / 60 g
  • Fish sauce – 2 tablespoons / 30 ml
  • Salt – to taste

Instructions

  1. In a large pot, bring 5 cups of water to a boil.
  2. Add the tamarind paste and stir until dissolved.
  3. Add the tomatoes, onion, and radish to the pot. Simmer for about 8 minutes.
  4. Gently add the bangus steaks into the simmering broth. Cook for 5 minutes.
  5. Add the eggplant and string beans, continue to simmer until the vegetables are tender.
  6. Stir in the spinach and fish sauce, then adjust the taste with salt as needed.
  7. Serve hot with steamed rice.
