Ingredients
- dried rice vermicelli – 200 g / 7 oz
- shrimp – 300 g / 10.5 oz, peeled and deveined
- coconut milk – 400 ml / 13.5 fl oz
- chicken stock – 500 ml / 17 fl oz
- laksa paste – 150 g / 5.3 oz
- bean sprouts – 100 g / 3.5 oz
- fish cake – 100 g / 3.5 oz, sliced
- fresh coriander – A handful, chopped
- lime – 1, cut into wedges
- fresh red chilies – 2, sliced
- salt – to taste
- sugar – 1 tsp
Instructions
- Cook the rice vermicelli according to package instructions, then rinse in cold water and set aside.
- In a large pot, heat the laksa paste over medium heat until fragrant, about 2-3 minutes.
- Add coconut milk and chicken stock to the pot, stirring well to combine. Bring to a simmer.
- Add the fish cake slices and shrimp, cooking until the shrimp are pink and opaque, about 3-4 minutes.
- Add the bean sprouts and sugar. Season with salt to taste.
- Divide the cooked vermicelli among bowls and ladle the hot soup over the top.
- Garnish with fresh coriander, sliced red chilies, and serve with lime wedges.
