Daing is a traditional Filipino seafood dish that showcases the Philippines’ rich fishing culture. Typically made by marinating fish in vinegar, garlic, and other spices, it’s then sun-dried or fried to perfection. Ingredients

  • Fresh fish (such as milkfish) – 2 whole / 500 grams each
  • Cane vinegar – 1 cup / 240 ml
  • Garlic cloves, crushed – 6 cloves
  • Soy sauce – 1/4 cup / 60 ml
  • Black peppercorns, whole – 1 tablespoon / 15 ml
  • Salt – 1 tablespoon / 15 g

Instructions

  1. Clean and gut the fish, then butterfly it so it lays flat.
  2. In a bowl, mix cane vinegar, crushed garlic, soy sauce, black peppercorns, and salt.
  3. Place the fish in a shallow dish and pour the marinade over it. Make sure the fish is fully submerged.
  4. Cover and refrigerate for at least 4 hours or overnight for better flavor.
  5. Remove the fish from the marinade and let it air dry for about 1 hour.
  6. Fry the fish in hot oil until golden brown and crispy.
  7. Serve with steamed rice and vinegar dipping sauce.

  • Milkfish -> Mackerel or tilapia
