Ingredients

  • sotanghon noodles (vermicelli) – 200 g / 7 oz
  • chicken breast, sliced – 300 g / 10.5 oz
  • shrimp, peeled and deveined – 200 g / 7 oz
  • garlic, minced – 4 cloves
  • onion, sliced – 1 medium
  • carrot, julienned – 1 large
  • green beans, sliced diagonally – 100 g / 3.5 oz
  • cabbage, shredded – 150 g / 5 oz
  • soy sauce – 4 tbsp
  • fish sauce – 1 tbsp
  • chicken broth – 3 cups / 720 ml
  • cooking oil – 2 tbsp
  • ground black pepper – to taste
  • green onions, chopped – 2 tbsp
  • calamansi or lime wedges – for serving

Instructions

  1. Soak the sotanghon noodles in warm water for 10 minutes until softened, drain and set aside.
  2. In a large wok or pan, heat oil over medium heat and sauté the garlic and onion until translucent.
  3. Add the sliced chicken and cook until it turns white, then stir in the shrimp until pink and opaque.
  4. Pour in soy sauce, fish sauce, and chicken broth; bring to a boil.
  5. Add the carrots, green beans, and cabbage, and simmer for 3-4 minutes until vegetables are tender.
  6. Mix in the drained noodles, ensuring they are fully coated with the sauce.
  7. Season with ground black pepper to taste.
  8. Transfer to a serving platter, garnish with green onions, and serve with calamansi or lime wedges.
