Ingredients

  • Salt – 1 tbsp / 15 g
  • Peppercorns – 1 tbsp / 15 g
  • Bay leaves – 4 pieces
  • Garlic cloves – 5 pieces, crushed
  • Oil for deep frying – 2 cups / 480 mL

Instructions

  1. Place the pork belly in a pot with water, salt, peppercorns, bay leaves, and garlic. Bring to a boil over medium heat.
  2. Simmer for 1 to 1.5 hours or until the pork is tender, then remove it from the pot.
  3. Pat the pork belly dry with paper towels, ensuring as much moisture as possible is removed.
  4. Let the pork sit at room temperature for about 1 hour to air dry, or refrigerate uncovered overnight.
  5. Heat oil in a deep pan and carefully lower the pork into the hot oil.
  6. Fry the pork until the skin is golden brown and crispy, about 10-15 minutes.
  7. Remove the pork from the oil and let it drain on paper towels. Let it rest for a few minutes before slicing into serving pieces.
