Ingredients
- chicken breast – 500 g / 1 lb
- eggplant – 2 medium / 300 g
- fresh mushrooms – 200 g / 7 oz
- bamboo shoots – 200 g / 7 oz
- dill – 50 g / 2 oz
- holy basil – 30 g / 1 oz
- pepperwood stalks – 4 pieces
- lemongrass – 2 stalks, chopped
- galangal – 1 inch piece, sliced
- fish sauce – 3 tablespoons
- water – 750 ml / 3 cups
- salt – 1 teaspoon
- black pepper – 1 teaspoon
Instructions
- Slice the chicken breast into bite-size pieces.
- Cut the eggplant into cubes and slice the mushrooms.
- In a large pot, combine chicken, eggplant, mushrooms, and bamboo shoots.
- Add dill, basil, and pepperwood stalks to the pot.
- Incorporate chopped lemongrass and sliced galangal.
- Pour in fish sauce and water, then season with salt and pepper.
- Bring the mixture to a boil, then reduce to a simmer.
- Cover and cook for 45 minutes, stirring occasionally, until flavors meld and ingredients are tender.
- Serve warm, garnished with additional fresh herbs if desired.
