Ingredients

  • beef shank – 2 lbs / 900 g
  • water – 10 cups / 2.4 L
  • corn – 2 ears, husked and cut into thirds
  • green beans – 1 cup / 100 g
  • cabbage – 1 small head, quartered
  • onion – 1 large, sliced
  • garlic – 4 cloves, crushed
  • fish sauce – 3 tbsp / 45 ml
  • black peppercorns – 1 tsp / 5 g
  • bay leaves – 2 whole
  • salt – to taste

Instructions

  1. In a large pot, combine beef shank and water. Bring to a boil.
  2. Skim off scum that forms on top. Lower to a simmer and add onions, garlic, peppercorns, and bay leaves.
  3. Cover and cook for 1.5 to 2 hours or until the beef is tender. Add more water as necessary to keep the beef submerged.
  4. Add fish sauce and adjust salt to taste.
  5. Add corn and simmer for 10 minutes.
  6. Add green beans and cook for another 5 minutes.
  7. Finally, add cabbage and cook until vegetables are tender-crisp.
  8. Serve hot and enjoy the rich, hearty broth.
