Ingredients
- beef shank – 2 lbs / 900 g
- water – 10 cups / 2.4 L
- corn – 2 ears, husked and cut into thirds
- green beans – 1 cup / 100 g
- cabbage – 1 small head, quartered
- onion – 1 large, sliced
- garlic – 4 cloves, crushed
- fish sauce – 3 tbsp / 45 ml
- black peppercorns – 1 tsp / 5 g
- bay leaves – 2 whole
- salt – to taste
Instructions
- In a large pot, combine beef shank and water. Bring to a boil.
- Skim off scum that forms on top. Lower to a simmer and add onions, garlic, peppercorns, and bay leaves.
- Cover and cook for 1.5 to 2 hours or until the beef is tender. Add more water as necessary to keep the beef submerged.
- Add fish sauce and adjust salt to taste.
- Add corn and simmer for 10 minutes.
- Add green beans and cook for another 5 minutes.
- Finally, add cabbage and cook until vegetables are tender-crisp.
- Serve hot and enjoy the rich, hearty broth.
