Ingredients

  • jasmine rice – 2 cups / 400 g
  • coconut milk – 2 cups / 480 ml
  • water – 1 cup / 240 ml
  • lemongrass, bruised – 2 stalks
  • bay leaves – 3 leaves
  • galangal, sliced – 1 inch piece
  • shallots, sliced – 4 shallots
  • garlic, minced – 3 cloves
  • salt – 1 teaspoon
  • sugar – 1 teaspoon

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rice, coconut milk, water, lemongrass, bay leaves, galangal, shallots, garlic, salt, and sugar.
  3. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let it sit covered for another 10 minutes.
  5. Fluff the rice with a fork and serve warm.
