Ingredients
- pork belly – 2 lbs / 900 g
- shallots – 5 pieces / 100 g
- garlic cloves – 6 pieces / 30 g
- lemongrass stalks – 2 stalks / 30 g
- palm sugar – 3 tbsp / 45 g
- tamarind paste – 2 tbsp / 30 g
- coriander seeds – 1 tsp / 5 g
- turmeric powder – 1 tsp / 5 g
- salt – 1 tsp / 5 g
- coconut oil – 2 tbsp / 30 ml
- water – 1 cup / 240 ml
Instructions
- Preheat the oven to 350°F (175°C).
- Grind shallots, garlic, and lemongrass into a paste using a mortar and pestle.
- Mix the paste with palm sugar, tamarind paste, coriander seeds, turmeric powder, salt, and coconut oil.
- Rub the mixture over the pork belly, ensuring it’s well coated.
- Place the pork in a roasting pan and add water to the bottom of the pan.
- Roast in the preheated oven for 2 hours, basting occasionally with the pan juices.
- Increase the oven temperature to 425°F (220°C) for the last 20 minutes for a crispy finish.
- Rest for 10 minutes before slicing and serving.
