Jukut Ares is a traditional Indonesian soup hailing from the serene landscapes of Bali. Ingredients
- young banana stems – 500 g
- boneless chicken thighs – 400 g
- coconut milk – 300 ml
- water – 1 liter
- shallots – 5, finely sliced
- garlic cloves – 3, minced
- lemongrass stalk – 1, bruised
- kaffir lime leaves – 3
- galangal – 2 cm piece, smashed
- turmeric – 1 tsp, ground
- coriander seeds – 1 tsp, ground
- red chili – 2, sliced
- palm sugar – 1 tbsp
- salt – to taste
- pepper – to taste
- basil leaves – a handful, for garnish
Instructions
- Cut the young banana stems into thin slices and soak in water to prevent browning.
- In a large pot, bring 1 liter of water to a boil. Add the chicken thighs and reduce to a simmer. Cook until the chicken is tender, about 25 minutes.
- Remove the chicken, shred the meat, and return it to the pot.
- In a separate pan, heat coconut milk over medium heat. Add shallots, garlic, lemongrass, kaffir lime leaves, galangal, turmeric, coriander, and red chili. Sauté until fragrant.
- Pour the sautéed mixture into the pot with the chicken and water. Add the banana stems.
- Season with palm sugar, salt, and pepper. Let the soup simmer gently for 20 minutes.
- Serve hot, garnished with fresh basil leaves.
