Ingredients

- Peanut butter – 1/2 cup / 120 g

- Eggplant – 2 medium, sliced
- Bok choy – 1 bunch
- Green beans – 1 cup / 150 g
- Garlic – 4 cloves, minced
- Onion – 1 large, chopped
- Fish sauce – 2 tbsp / 30 ml
- Beef stock – 4 cups / 960 ml
- Rice flour – 2 tbsp / 16 g
- Salt – to taste
- Pepper – to taste
Instructions
- 1. Boil the oxtail and beef tripe in water until tender. This typically takes about 2-3 hours.
- 2. In a large pot, heat some oil and sauté garlic and onion until fragrant.
- 3. Add the cooked oxtail and tripe. Stir in peanut butter and fish sauce, mixing well.
- 4. Dissolve annatto powder in beef stock and pour into the pot. Bring to a simmer.
- 5. Add rice flour to thicken the sauce, stirring constantly to prevent lumps.
- 6. Incorporate the eggplant, green beans, and bok choy, cooking until vegetables are tender.
- 7. Season with salt and pepper to taste. Serve hot with steamed rice.
