Goi Cuon, also known as Vietnamese fresh spring rolls, is a vibrant dish originating from Vietnam. These rolls are a staple in Vietnamese cuisine, often enjoyed as an appetizer or a light main course. They offer a delightful combination of fresh vegetables, herbs, and proteins wrapped in translucent rice paper, making them not only tasty but also visually appealing. Ingredients
- rice paper wrappers – 12 sheets
- shrimp, cooked and sliced – 200 g / 7 oz
- pork loin, cooked and sliced thinly – 200 g / 7 oz
- rice vermicelli noodles, cooked – 100 g / 3.5 oz
- lettuce leaves – 6 leaves
- fresh mint leaves – 1/2 cup loosely packed
- fresh cilantro – 1/2 cup loosely packed
- carrot, julienned – 1 large
- cucumber, julienned – 1 medium
- peanut dipping sauce – for serving
Instructions
- Fill a large bowl with warm water. Dip a rice paper wrapper into the water for about 5 seconds, until it softens.
- Lay the rice paper on a clean, damp kitchen towel.
- On one end of the wrapper, lay down some lettuce, a few mint and cilantro leaves, a small portion of vermicelli, a piece each of shrimp, pork, carrot, and cucumber.
- Roll up the wrapper, folding in the sides as you go to enclose the filling tightly.
- Repeat with the remaining wrappers and fillings.
- Serve with peanut dipping sauce.
Substitutions
- shrimp -> tofu or chicken
- pork loin -> beef or tempeh
- peanut dipping sauce -> hoisin sauce with crushed peanuts
