Sekuwa is a traditional Nepali meat dish that embodies the flavors of the Himalayas. This grilled meat delicacy is traditionally made using chicken, lamb, or pork that’s been marinated with a harmonious blend of Nepali spices including cumin, coriander, and timur (Sichuan pepper). Originating from the Terai region, Sekuwa is deeply rooted in the cultural festivals and celebrations of Nepal, offering a smoky, rich taste that brings people together over barbecues and open fires in both rural and urban settings.

Ingredients

  • Chicken thighs – 2 lbs / 900 g
  • Yogurt – 1/2 cup / 120 g
  • Mustard oil – 2 tbsp
  • Garlic paste – 1 tbsp
  • Ginger paste – 1 tbsp
  • Cumin powder – 2 tsp
  • Coriander powder – 2 tsp
  • Turmeric powder – 1 tsp
  • Chili powder – 1/2 tsp
  • Timur (Sichuan pepper) – 1/2 tsp
  • Salt – to taste
  • Lemon juice – 2 tbsp

Instructions

  1. Cut the chicken thighs into bite-sized pieces.
  2. In a large bowl, combine yogurt, mustard oil, garlic paste, ginger paste, cumin, coriander, turmeric, chili powder, timur, salt, and lemon juice.
  3. Add the chicken pieces to the marinade, ensuring every piece is well coated. Allow to marinate for at least 1 hour in the refrigerator.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken onto skewers.
  6. Grill the chicken skewers for about 10-15 minutes, turning occasionally, until fully cooked and slightly charred.
  7. Serve hot with fresh coriander and a wedge of lemon.
