Phitti is a traditional bread hailing from the picturesque valleys of Gilgit-Baltistan, Pakistan. Ingredients
- whole wheat flour – 3 cups / 360 g
- warm water – 1½ cups / 360 ml
- active dry yeast – 1 packet / 7 g
- sugar – 2 tbsp / 24 g
- salt – 1 tsp / 6 g
- vegetable oil – 2 tbsp / 30 ml
Instructions
- In a small bowl, combine warm water and sugar, then sprinkle the yeast over the top. Allow to sit for 10 minutes until frothy.
- In a large mixing bowl, combine the whole wheat flour and salt. Make a well in the center and add the yeast mixture and vegetable oil.
- Mix until a soft dough forms. Turn out onto a floured surface and knead for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, turning to coat all sides. Cover and let it rise in a warm place until doubled in size, about 1 hour.
- Preheat your oven to 375°F (190°C). Punch down the risen dough and shape it into a round loaf.
- Place the loaf on a greased baking sheet. Cover and let it rise again for about 30 minutes.
- Slash the top with a sharp knife. Bake for 30 to 35 minutes, until golden brown. Tap the bottom of the loaf; it should sound hollow.
- Let cool on a wire rack before slicing and serving.
