Sambar is an emblematic dish from Southern India, a region rich in culinary heritage and diverse traditional recipes. This spicy, tangy, and aromatic stew is made with lentils and a unique blend of spices. Historically, Sambar is said to be named after Sambhaji, the second ruler of the Maratha Empire, who first experimented with the addition of tamarind in lentil dishes. Sambar’s robust flavor comes from its use of Sambar powder, a blend of ground roasted spices that embodies the quintessential taste of South Indian cuisine.
