Ingredients
- Lotus root – 300 g / 10.5 oz, peeled and grated
- Potatoes – 200 g / 7 oz, boiled and mashed
- Green chili – 1, finely chopped
- Ginger – 1 inch / 2 cm, grated
- Coriander leaves – 2 tbsp, finely chopped
- Roasted cumin powder – 1 tsp
- Garam masala – 1 tsp
- Salt – to taste
- Breadcrumbs – 1 cup / 100 g
- Oil – for shallow frying
Instructions
- Peel and grate the lotus root. Ensure you squeeze out any excess water from it.
- In a large bowl, mix the grated lotus root, mashed potatoes, green chili, grated ginger, chopped coriander leaves, roasted cumin powder, garam masala, and salt.
- Shape the mixture into small round patties, about 2 inches in diameter.
- Coat each patty with breadcrumbs and set aside on a plate.
- Heat oil in a frying pan over medium heat. Shallow fry the patties until they are golden brown and crispy on each side, about 3-4 minutes per side.
- Remove from the pan and drain excess oil on paper towels.
- Serve hot with mint chutney or yogurt dip.
