Ingredients
- karimeen (pearl spot fish) – 4 whole fish, cleaned and gutted
- tamarind paste – 2 tablespoons
- coconut oil – 4 tablespoons
- shallots – 1 cup / 150 g, finely sliced
- ginger-garlic paste – 2 tablespoons
- green chili – 2, slit
- curry leaves – 2 sprigs
- turmeric powder – 1 teaspoon
- red chili powder – 2 teaspoons
- garam masala – 1 teaspoon
- salt – to taste
- banana leaves – 4 large pieces, washed
- lemon wedges – for serving
Instructions
- In a bowl, mix tamarind paste, turmeric powder, red chili powder, garam masala, and salt to create a thick paste.
- Gently cut slits on the fish and apply the spice paste evenly all over.
- Heat coconut oil in a pan and sauté shallots, ginger-garlic paste, green chili, and curry leaves until golden brown.
- Place each fish on a banana leaf, top it with the sautéed mixture, and wrap tightly.
- Steam the wrapped fish for 20-25 minutes until cooked through.
- Serve hot with lemon wedges.
