Ingredients

  • chicken thighs – 600 g / 1.3 lbs
  • vegetable oil – 2 tbsp
  • yellow onion – 1 large, finely chopped
  • ginger – 1-inch piece, minced
  • garlic cloves – 4, minced
  • crushed tomatoes – 400 g / 14 oz can
  • coconut milk – 200 ml / 3/4 cup
  • turmeric – 1 tsp
  • cumin – 1 tsp
  • coriander – 1 tsp
  • chili powder – 1/2 tsp
  • garam masala – 1 tsp
  • salt – to taste
  • fresh cilantro – handful, chopped

Instructions

  1. Heat oil in a large pot over medium heat. Add onions and sauté until golden brown.
  2. Add ginger and garlic, sauté for another minute until fragrant.
  3. Add turmeric, cumin, coriander, chili powder, and salt. Stir for 30 seconds until the spices are aromatic.
  4. Stir in the crushed tomatoes, cook for 5 minutes on low heat.
  5. Add the chicken thighs, coat with the spice mixture, and cook until browned on all sides.
  6. Pour in the coconut milk, bring to a simmer, then lower the heat and let it stew for 30 minutes until the chicken is tender.
  7. Stir in garam masala, adjust salt if needed, and cook for another 5 minutes.
  8. Garnish with fresh cilantro and serve hot with rice or naan.
