Karahi is a rich and aromatic dish, traditional to South Asia, especially popular in Pakistan and North India. Named after the deep, flat-bottomed cooking vessel it’s made in, called a ‘karahi’ or ‘kadai’, this dish is known for its robust flavors, made using fresh tomatoes, ginger, and a medley of spices. Typically prepared using chicken or meat, the dish is lauded for its simplicity and deep, complex taste reminiscent of traditional tandoori-style cooking.
Ingredients
- chicken, bone-in pieces – 1 kg / 2.2 lbs
- tomatoes, chopped – 500 g / 1.1 lbs
- onion, finely sliced – 1 medium / 150 g
- ginger paste – 1 tbsp / 15 g
- garlic paste – 1 tbsp / 15 g
- green chilies, sliced – 2-3
- red chili powder – 1 tsp / 5 g
- turmeric powder – 1/2 tsp / 2.5 g
- coriander powder – 1 tsp / 5 g
- garam masala – 1 tbsp / 15 g
- fresh coriander leaves, chopped – 1/4 cup / 15 g
- ghee or oil – 1/4 cup / 60 ml
- salt – to taste
Instructions
- Heat ghee/oil in a karahi or deep pan over medium heat.
- Add the onions and sauté until golden brown, about 5 minutes.
- Stir in garlic and ginger paste, cook for 2 more minutes until fragrant.
- Add chicken pieces and cook until they are browned on all sides.
- Mix in tomatoes, red chili powder, turmeric, coriander powder, and salt.
- Cook on medium heat until tomatoes break down and form a thick gravy, stirring occasionally.
- Add sliced green chilies and cover the pan to cook until chicken is fully cooked, about 15-20 minutes.
- Sprinkle garam masala and adjust salt as needed.
- Garnish with fresh coriander leaves before serving.
