Chole Bhature – Classic

Chole Bhature is a quintessential North Indian dish that combines spicy chickpeas (chole) with deep-fried bread (bhature). Originating from Punjab, it has become a staple dish across India, celebrated for its rich flavors and satisfying heartiness. Traditionally consumed as a breakfast or lunch item, this dish is beloved for its bold spices and is often paired with pickles and yogurt for balanced indulgence.
Ingredients
- dried chickpeas – 1 cup / 200 g
- onion – 1 large, finely chopped / 150 g
- tomato – 2 medium, pureed / 200 g
- ginger-garlic paste – 1 tablespoon / 15 g
- oil – 3 tablespoons / 45 ml
- cumin seeds – 1 teaspoon / 5 g
- coriander powder – 1 tablespoon / 10 g
- garam masala – 1 teaspoon / 5 g
- red chili powder – 1 teaspoon / 5 g
- salt – to taste
- bhature flour – 2 cups / 300 g (made from all-purpose flour)
- yogurt – 1/2 cup / 120 ml
- baking soda – 1/4 teaspoon / 1 g
- sugar – 1 teaspoon / 5 g
- water – as needed for dough and boiling
- oil for deep frying – approx. 2 cups / 480 ml
Instructions
- Soak the chickpeas overnight in enough water to cover them.
- Drain the chickpeas and pressure cook them with fresh water for about 20 minutes, until soft.
- In a pan, heat oil and add cumin seeds, letting them splutter. Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook until the raw smell disappears. Stir in the pureed tomatoes and cook until the oil separates.
- Add coriander powder, garam masala, and red chili powder. Cook for a few minutes before adding the boiled chickpeas.
- Simmer the chickpeas in the gravy for 10-15 minutes, mashing some with the back of the spoon for thickness.
- For the bhature, mix flour, yogurt, baking soda, salt, and sugar. Knead into a soft dough using water as needed, and let it rest for 2 hours.
- Divide the dough and roll each portion into an oval disk.
- Deep fry in hot oil until golden and puffed.
- Serve the chole with hot bhature, along with pickles and yogurt.
