Golfeados – Classic

Golfeados are a delectable Venezuelan pastry, delightfully intertwined with the rich cultural traditions of the country. Originating from the bakeries of Caracas, these sweet rolls became popular in the mid-20th century. Golfeados are similar to cinnamon rolls but with a distinctive twist of anise and cheese, reflecting the diverse culinary influences in Venezuelan cuisine. Sweet, fluffy, and aromatic, Golfeados are typically enjoyed as a breakfast treat or an afternoon snack, often accompanied by a hot cup of coffee or chicha, a traditional drink.
Ingredients
- all-purpose flour – 4 cups / 500 g
- dry yeast – 1 tablespoon / 12 g
- sugar – 1/2 cup / 100 g
- warm water – 1 cup / 240 ml
- butter – 6 tablespoons / 85 g
- anise seeds – 1 teaspoon / 2 g
- grated cheese (like queso de mano or mozzarella) – 1 cup / 100 g
- brown sugar – 1/2 cup / 100 g
- salt – 1/2 teaspoon / 2.5 g
- egg – 1 large
- ground cinnamon – 1/2 teaspoon / 1 g
Instructions
- In a large bowl, dissolve the yeast and a pinch of sugar in warm water. Let it sit for about 10 minutes until frothy.
- Incorporate the flour, half of the sugar, melted butter, salt, and egg into the yeast mixture. Knead the dough for about 10 minutes until it’s smooth and elastic.
- Cover the dough with a clean towel and let it rise for 1 hour, or until it doubles in size.
- Preheat your oven to 375°F (190°C).
- Roll out the dough into a large rectangle, about 1/4 inch thick.
- Sprinkle the remaining sugar, brown sugar, anise seeds, and cheese over the dough surface.
- Tightly roll up the dough from one long side to the other to form a log. Slice into rolls about 1 inch thick.
- Place the rolls onto a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.
- Bake the rolls in the preheated oven for 20-25 minutes until golden brown.
- Serve warm and enjoy the Golfeados with coffee or your favorite Venezuelan drink.
