Ingredients

- ice-cold water – 3/4 cup / 180 ml
- ground beef – 1 lb / 450 g
- onion – 1 medium / 150 g, finely chopped
- hard-boiled eggs – 2, chopped
- green olives – 1/2 cup / 75 g, sliced
- paprika – 1 tsp / 5 g
- cumin – 1/2 tsp / 2.5 g
- black pepper – 1/4 tsp / 1 g
- vegetable oil – 2 tbsp / 30 ml
Instructions
- Combine flour and salt in a large bowl. Add butter and mix until the mixture resembles coarse crumbs.
- Add ice-cold water gradually, mixing until a dough forms. Wrap the dough in plastic and refrigerate for 30 minutes.
- In a skillet, heat oil over medium heat. Cook onions until soft, then add ground beef, stirring to break it up until browned.
- Stir in paprika, cumin, and black pepper. Cook for another 5 minutes.
- Remove from heat and stir in chopped hard-boiled eggs and sliced olives. Let the filling cool.
- Preheat your oven to 375°F (190°C). Roll out the dough to 1/8 inch thickness on a floured surface. Cut into circles using a 4-inch cutter.
- Place a spoonful of filling in each dough circle, fold over, and seal the edges by pinching or using a fork.
- Place empanadas on a baking sheet lined with parchment paper and bake for 25-30 minutes until golden brown.
