  • cilantro, chopped – 1/2 cup / 30 g
  • corn on the cob, cut into pieces – 2 ears / 200 g
  • salt – 2 tsp / 10 g
  • black pepper – 1 tsp / 5 g

Instructions

  1. Place the beef short ribs and water in a large pot. Bring to a boil over medium-high heat.
  2. Reduce the heat to low, cover, and simmer for about 1.5 hours until the meat is tender.
  3. Skim off any foam that forms on the surface during cooking.
  4. Add the potatoes, onions, scallions, corn, salt, and pepper to the pot.
  5. Simmer for an additional 30 minutes until the vegetables are cooked through.
