Ingredients

  • chicken thighs – 1.5 lb / 680 g
  • red wine – 2 cups / 480 ml
  • onion – 1 large, finely chopped
  • garlic – 4 cloves, minced
  • bay leaves – 2 leaves
  • thyme – 1 tsp / 5 g dried
  • carrot – 2 medium, sliced
  • celery – 2 stalks, sliced
  • tomato paste – 2 tbsp / 30 g
  • olive oil – 2 tbsp / 30 ml
  • flour – 2 tbsp / 30 g
  • salt and pepper – to taste

Instructions

  1. Marinate the chicken thighs in red wine, garlic, bay leaves, and thyme overnight in the refrigerator.
  2. Remove chicken thighs, pat them dry, and reserve the marinade.
  3. Heat olive oil in a large pot over medium heat. Brown the chicken thighs on all sides, then set aside.
  4. In the same pot, add onions and cook until soft. Stir in flour and tomato paste, cooking for 1-2 minutes.
  5. Gradually add the reserved marinade while stirring, bringing to a simmer.
  6. Return chicken to the pot, adding carrots and celery. Cover and simmer gently for 1.5 hours, stirring occasionally.
  7. Season with salt and pepper before serving.
