It is a vibrant medley of potatoes (aloo) and drumsticks (boda), simmered in aromatic spices that evoke the warmth and hospitality of Fijian cuisine. Ingredients

  • Potatoes – 3 large / 500 g
  • Drumsticks (moringa pods) – 8-10 pieces / 200 g
  • Onions – 2 medium / 150 g
  • Garlic cloves – 4 cloves / 20 g
  • Ginger root – 1-inch piece / 15 g
  • Tomatoes – 2 medium / 200 g
  • Turmeric powder – 1 tsp / 5 g
  • Cumin seeds – 1 tsp / 5 g
  • Coriander powder – 2 tsp / 10 g
  • Salt – to taste
  • Vegetable oil – 3 tbsp / 45 ml
  • Water – 2 cups / 480 ml
  • Fresh coriander leaves – 1/4 cup / 15 g

Instructions

  1. Peel and cube the potatoes. Trim the drumsticks and cut them into 2-inch pieces.
  2. Finely chop the onions, garlic, and ginger. Dice the tomatoes.
  3. Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
  4. Add onions, garlic, and ginger to the pot. Sauté until onions are translucent.
  5. Stir in diced tomatoes, turmeric, and coriander powder. Cook until tomatoes soften.
  6. Add potatoes and drumsticks to the pot. Stir well to coat with spices.
  7. Pour in water, season with salt, and bring to a boil. Reduce heat and simmer until potatoes and drumsticks are tender.
  8. Garnish with fresh coriander leaves before serving hot.
