Ingredients

  • beef chuck – 2 lbs / 907 g
  • coconut milk – 2 cups / 480 ml
  • onion, chopped – 1 large
  • garlic cloves, minced – 4 cloves
  • ginger, minced – 1 tbsp / 15 g
  • soy sauce – 3 tbsp / 45 ml
  • tomato paste – 2 tbsp / 30 g
  • lemon juice – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – to taste
  • vegetable oil – 2 tbsp / 30 ml

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Brown the beef chuck on all sides, then remove the meat and set aside.
  3. In the same pot, add onions, garlic, and ginger; sauté until the onions are translucent.
  4. Stir in the tomato paste and soy sauce, cooking for an additional 2 minutes.
  5. Return the beef to the pot, pour in the coconut milk and lemon juice, and season with salt and pepper.
  6. Bring to a simmer, reduce the heat to low, and cover. Let it cook slowly for 1.5 to 2 hours until the meat is tender.
  7. Stir occasionally and add more coconut milk if needed.
  8. Adjust seasoning before serving, then serve hot garnished with fresh herbs.
