Cronut – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
The Cronut is a delightful pastry hybrid that took the United States by storm, particularly in New York City, where it was invented by the renowned pastry chef Dominique Ansel in 2013. This innovative creation combines the best of two worlds: the flaky layers of a croissant and the round shape and decadent glaze of a donut. The Cronut offers a textural experience that’s both buttery and slightly crunchy on the outside, with a sweet, creamy filling that varies often, making it an irresistible treat for pastry lovers.

Ingredients

  • All-purpose flour – 2 1/2 cups / 300 g
  • Unsalted butter (cold) – 1 cup / 225 g
  • Whole milk – 1/2 cup / 120 ml
  • Granulated sugar – 2 tbsp / 25 g
  • Active dry yeast – 2 tsp / 7 g
  • Eggs – 2 whole
  • Salt – 1 tsp / 5 g
  • Vegetable oil (for frying) – 2 cups / 480 ml
  • Vanilla extract – 1 tsp / 5 ml
  • Powdered sugar – 1 cup / 120 g
  • Pastry cream (optional filling) – 1 cup / 240 ml

Instructions

  1. In a bowl, dissolve the yeast in the warm milk and let it sit for 5 minutes until foamy.
  2. In a large bowl, mix flour, sugar, and salt. Cut in the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Add the yeast mixture and eggs to the dry ingredients. Mix until a sticky dough forms.
  4. Roll out the dough on a floured surface into a rectangle. Fold it into thirds like a letter. Refrigerate for 30 minutes.
  5. Roll out, fold, and refrigerate the dough at least two more times to create layers.
  6. After the final roll, cut the dough into donut shapes using a round cutter and a smaller one for the center.
  7. Heat the oil in a deep fryer or heavy pan to 350°F (175°C). Fry the cronut in batches until golden brown, about 3-4 minutes per side.
  8. Remove and drain on paper towels. Cool slightly then fill with optional pastry cream and sprinkle with powdered sugar.
  9. Drizzle with or dip in vanilla glaze made by combining vanilla extract and powdered sugar with just enough water to reach desired consistency.

Substitutions

  • All-purpose flour -> Bread flour
  • Whole milk -> Almond milk
  • Vegetable oil -> Canola oil

Enhancements in the Next Evolution

  • Incorporate a flavored glaze such as chocolate or lemon to enhance the pastry’s complexity.
  • Experiment with different fillings like chocolate ganache or fruit jam for variety.
  • Try adding a layer of spice, for instance, a hint of cinnamon to the sugar dusting.
