- black pepper – 1/2 teaspoon
- red pepper flakes – 1/4 teaspoon
Instructions
- Rinse the collard greens under cold water, remove stems, and chop them coarsely.
- In a large pot, combine the water, smoked ham hock, and onion. Bring to a boil.
- Reduce the heat, cover, and simmer for about 30 minutes until the ham hock begins to impart flavor.
- Add the chopped collard greens, garlic, apple cider vinegar, salt, and black pepper to the pot.
- Simmer uncovered for an additional 45 minutes or until the greens are tender.
- Taste and adjust seasoning, adding more salt, pepper, or red pepper flakes as desired.
- Serve hot, ideally with cornbread on the side.
