Ingredients
- beef shank – 4 pieces / 1.2 kg
- olive oil – 2 tbsp / 30 ml
- onion, chopped – 1 large / 150 g
- garlic cloves, minced – 4 cloves / 12 g
- carrots, sliced – 3 medium / 150 g
- celery stalks, sliced – 2 stalks / 100 g
- red wine – 1 cup / 240 ml
- beef broth – 4 cups / 960 ml
- tomato paste – 2 tbsp / 30 g
- thyme, dried – 1 tsp / 1 g
- rosemary, dried – 1 tsp / 1 g
- bay leaves – 2 leaves
- salt – to taste
- black pepper – to taste
Instructions
- Heat the olive oil in a large pot over medium-high heat. Sear the beef shanks on all sides until browned. Remove and set aside.
- In the same pot, add chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the carrots and celery, cooking for about 5 minutes until they begin to soften.
- Pour in the red wine, scraping up any browned bits from the bottom of the pot. Allow the wine to reduce by half.
- Return the beef shanks to the pot, then add beef broth, tomato paste, thyme, rosemary, and bay leaves.
- Season with salt and black pepper to taste. Bring to a simmer, then reduce heat to low.
- Cover and cook on low heat for 2.5 to 3 hours, until the beef is tender and falls off the bone.
- Serve hot, garnished with fresh herbs if desired.
