Ingredients

  • beef brisket – 2 pounds / 900 g
  • olive oil – 2 tablespoons / 30 ml
  • garlic cloves, minced – 4 cloves
  • fresh rosemary, chopped – 1 tablespoon / 5 g
  • onions, sliced – 2 large / 300 g
  • beef stock – 2 cups / 480 ml
  • red wine – 1 cup / 240 ml
  • salt – 1 teaspoon / 5 g
  • black pepper – 1 teaspoon / 5 g

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Season the beef brisket with salt and pepper.
  3. Heat olive oil in a large oven-proof skillet over medium-high heat.
  4. Brown the brisket on all sides to seal in the juices, about 4-5 minutes per side.
  5. Remove the brisket and set it aside. In the same skillet, add garlic and onions, sautéing until soft and golden.
  6. Add rosemary, beef stock, and red wine, stirring to combine and scraping up any browned bits from the bottom.
  7. Return the brisket to the skillet, making sure it is covered with the liquid.
  8. Cover the skillet and place in the preheated oven, cooking for 3 to 4 hours, or until the beef is tender.
  9. Remove from oven and let rest for 10 minutes before slicing to serve.
