- tomato paste – 3 tbsp / 50 g
- beef broth – 5 cups / 1.2 L
- bay leaves – 2
- fresh thyme – 1 tsp / 5 g

- black pepper – to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the beef chuck pieces on all sides, about 5-7 minutes, then remove and set aside.
- In the same pot, add the onion and garlic, sautéing until translucent.
- Stir in the carrots, celery, and potatoes, cooking for an additional 5 minutes.
- Return the beef to the pot and add the tomato paste, stirring to coat the meat and vegetables.
- Pour in the beef broth, add bay leaves, thyme, salt, and pepper. Bring to a boil.
