Ingredients

  • Pre-made pie crusts – 2 (9-inch)
  • Apples, peeled and sliced – 6 cups / approx. 700 g
  • Granulated sugar – 3/4 cup / 150 g
  • Brown sugar – 1/4 cup / 55 g
  • All-purpose flour – 1/4 cup / 30 g
  • Ground cinnamon – 1 teaspoon
  • Ground nutmeg – 1/4 teaspoon
  • Lemon juice – 1 tablespoon
  • Sharp cheddar cheese, shredded – 1 1/2 cups / 170 g
  • Unsalted butter – 2 tablespoons / 28 g, cut into small pieces
  • Egg yolk – 1, beaten
  • Milk – 1 tablespoon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Lay one pie crust in a 9-inch pie pan and set aside.
  3. In a large bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly.
  4. Layer half of the apple mixture into the prepared pie crust. Sprinkle with half of the shredded cheddar cheese.
  5. Add the remaining apple mixture and top with the rest of the cheese.
  6. Dot the top with butter pieces.
  7. Cover with the second pie crust, crimping the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  8. Mix the egg yolk and milk, then brush the mixture over the crust.
  9. Bake for 45-50 minutes, or until the crust is golden brown and the apples are tender.
  10. Cool on a wire rack before serving.
