Ingredients
- spaghetti – 12 oz / 340 g
- chicken breast – 2 cups / 300 g, cooked and shredded
- sliced mushrooms – 1 cup / 120 g
- unsalted butter – 1/4 cup / 56 g
- all-purpose flour – 1/4 cup / 30 g
- chicken broth – 2 cups / 480 ml
- heavy cream – 1 cup / 240 ml
- grated Parmesan cheese – 1 cup / 90 g
- salt – 1 tsp
- black pepper – 1/2 tsp
- bread crumbs – 1/2 cup / 60 g
- olive oil – 2 tbsp / 30 ml
- chopped parsley – 2 tbsp / 8 g
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the spaghetti according to package instructions until al dente, then drain.
- In a large skillet, melt butter over medium heat. Add mushrooms and sauté until tender.
- Stir in the flour to make a roux and cook for 1 minute.
- Gradually whisk in the chicken broth and cream, cooking until the sauce thickens.
- Stir in 1/2 cup of Parmesan cheese, season with salt and pepper.
- Combine the cooked spaghetti, shredded chicken, and sauce. Mix well.
- Transfer to a greased baking dish. Mix remaining Parmesan cheese with bread crumbs and olive oil, then sprinkle over the top.
- Bake for 25-30 minutes until the top is golden and bubbly.
- Garnish with chopped parsley before serving.
