Originating from the Korean immigrant community in Los Angeles, this dish is famed for its unique cut of beef, which is thinly sliced across the bone to maximize marination and tenderness. Ingredients
- beef short ribs – 2 lbs / 900 g
- soy sauce – 1 cup / 240 ml
- brown sugar – 1/2 cup / 100 g
- sesame oil – 2 tbsp / 30 ml
- garlic cloves, minced – 4 cloves
- pear, grated – 1 medium
- green onions, chopped – 4 stalks
- ground black pepper – 1 tsp / 5 g
- water – 1/2 cup / 120 ml
Instructions
- Rinse the beef short ribs under cold water to remove bone fragments and impurities, then pat dry.
- In a large bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, grated pear, chopped green onions, ground black pepper, and water. Mix well.
- Place the short ribs in a large resealable plastic bag or shallow dish, and pour the marinade over them.
- Seal the bag or cover the dish, and refrigerate for at least 4 hours, ideally overnight, to allow flavors to meld.
- Preheat an outdoor grill or grill pan over medium-high heat. Remove ribs from marinade, discarding the marinade.
- Grill the ribs for about 6-8 minutes on each side, or until charred and cooked through.
- Serve the ribs hot, garnished with additional chopped green onions if desired.
