Khobz is a traditional Moroccan bread characterized by its round, flat shape and slightly chewy crust. It serves as an essential staple in Moroccan cuisine and has been enjoyed for generations. Typically baked in a wood-fired oven, khobz is deeply intertwined with the communal and familial aspects of Moroccan daily life, often used to scoop up flavorful tagines or enjoyed as a simple accompaniment to tea or soup.

Ingredients

  • all-purpose flour – 4 cups / 480 g
  • semolina flour – 1/2 cup / 85 g
  • warm water – 1 and 1/4 cups / 300 ml
  • sugar – 2 teaspoons / 8 g
  • salt – 1 teaspoon / 5 g
  • instant yeast – 2 and 1/4 teaspoons / 7 g
  • olive oil – 2 tablespoons / 30 ml

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, semolina flour, sugar, salt, and instant yeast.
  2. Gradually add the warm water, and mix using your hands or a stand mixer on low speed until a dough forms.
  3. Knead the dough on a lightly floured surface for about 10 minutes until it becomes smooth and elastic.
  4. Shape the dough into a ball and place it in a greased bowl. Cover it with a damp cloth and let it rise for about 1 hour or until doubled in size.
  5. Preheat your oven to 425°F (220°C). Punch down the dough and divide it into two equal parts.
  6. Shape each part into a round loaf and flatten it slightly. Place the loaves onto a baking sheet lined with parchment paper.
  7. Brush the tops with olive oil and make a few slashes on top using a sharp knife.
  8. Bake in the preheated oven for about 20-25 minutes or until the loaves are golden brown and sound hollow when tapped on the bottom.
  9. Let cool on a wire rack before serving.
