Ingredients
- Peppers (red and green) – 2 large / 300 g total
- Zucchini – 1 large / 250 g
- Potatoes – 2 medium / 400 g
- Pumpkin – 250 g, peeled and diced
- Eggs – 4
- Vegetable oil – 1 cup / 240 ml
- Harissa – 2 tablespoons
- Coriander – 1 tablespoon, chopped
- Salt – 1 teaspoon
- Black pepper – 1/2 teaspoon
Instructions
- Slice the peppers and zucchini into thin rounds.
- Cut the potatoes into small cubes and the pumpkin into bite-sized pieces.
- In a large frying pan, heat the vegetable oil over medium heat. Fry each vegetable separately, starting with the potatoes, until golden brown, then drain on paper towels to remove excess oil.
- Fry the eggs in the remaining oil until the whites are set but the yolks are still runny.
- In a large bowl, combine all the fried vegetables. Season with salt, black pepper, and harissa. Mix gently until well combined.
- Serve the vegetable mixture topped with the fried eggs and garnished with chopped coriander.
