Bissara is a traditional Egyptian vegetarian dish rooted in the timeless cuisine of North Africa. Ingredients
- dried peeled fava beans – 1 cup / 200 g
- water – 4 cups / 960 ml
- onion – 1 medium, chopped
- garlic cloves – 3, minced
- cumin powder – 1 tsp
- coriander powder – 1 tsp
- olive oil – 2 tbsp
- fresh parsley – 1/4 cup, chopped
- fresh dill – 1/4 cup, chopped
- salt – to taste
- black pepper – to taste
Instructions
- Rinse and soak the dried fava beans in water overnight.
- Drain the beans and add them to a large pot with 4 cups of fresh water.
- Bring to a boil, then reduce to a simmer and cook for approximately 1 hour or until the beans are tender.
- In a separate pan, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent and fragrant.
- Add the cumin and coriander powder, stirring for another minute.
- Once the beans are cooked, drain any excess water and transfer them to a food processor.
- Add the sautéed onion mixture to the food processor, along with parsley, dill, salt, and black pepper.
- Blend until smooth and creamy. Adjust seasoning if necessary.
- Transfer to a serving dish, drizzle with olive oil, and garnish with additional chopped parsley or dill.

- fresh dill -> dried dill, reduced to 1 tbsp
