Ingredients
- couscous – 2 cups / 320 g
- fish fillets (grouper or sea bream) – 1 lb / 450 g
- olive oil – 3 tablespoons
- onion, finely chopped – 1 large
- garlic cloves, minced – 4 cloves
- tomato paste – 2 tablespoons
- hot water – 1 cup / 240 ml
- cumin powder – 1 teaspoon
- coriander powder – 1 teaspoon
- paprika – 1 teaspoon
- salt – to taste
- black pepper – to taste
- fresh parsley, chopped – 1/4 cup / 15 g
- lemon wedges – to serve
Instructions
- Rinse the couscous under cold water and set aside.
- In a large skillet, heat olive oil over medium heat. Add the onions and garlic, sautéing until the onions become translucent.
- Stir in the tomato paste, cumin, coriander, and paprika. Cook for another minute until spices are fragrant.
- Add the fish fillets, seasoning with salt and black pepper. Cook for 5 minutes on each side until flaky.
- Pour in hot water and bring to a simmer. Add the couscous, cover, and allow it to absorb the flavors for 10 minutes.
- Serve garnished with fresh parsley and lemon wedges.
