Ingredients
- fresh cilantro – 1 cup / 16 g
- fresh parsley – 1 cup / 15 g
- garlic cloves – 4 cloves, minced
- ground cumin – 1 tsp / 2 g
- paprika – 1 tsp / 2 g
- ground coriander – 1 tsp / 2 g
- cayenne pepper – 1/2 tsp / 1 g
- lemon juice – 2 tbsp / 30 ml
- olive oil – 1/4 cup / 60 ml
- salt – 1 tsp / 6 g
- black pepper – 1/2 tsp / 1 g
Instructions
- In a food processor, combine fresh cilantro and parsley. Pulse until finely chopped.
- Add minced garlic, cumin, paprika, coriander, cayenne pepper, lemon juice, olive oil, salt, and black pepper to the chopped herbs.
- Process the mixture until it forms a smooth paste. Adjust seasoning to taste.
- Transfer the chermoula to a bowl. It can be used immediately or stored in the refrigerator for up to a week.
